Who doesn’t love pancakes? The problem with traditional pancakes though is that there is practically no nutritional value at all. Like, zero.
The good news is is that there are all sorts of ways to make them healthy and nutritious. 🙂 I have scoured the internet and tested out many different recipes and finally settled on a concoction of my own version of protein pancakes. The best part is that they actually taste good!
I mix up a big batch of 8 servings of the Base Ingredients below and keep it in a tight sealed tupperware. Then, in the morning all I have to do is scoop out a 1/2 cup of the base ingredients and add 1 egg white and 2 tablespoons water, then mix in any fruits and viola, pancakes in under 5 minutes!
These cook super fast and easy on a PAM sprayed saute pan on top of the stove on high heat.
Protein Pancakes
Base Ingredients (one serving)
• 1/3 cup oats – ground in blender
• ½ scoop (15g) protein powder of choice
• ¼ teaspoon baking powder
• ½ teaspoon cinnamon
Then Add (one serving)
• 1 egg white
• 2 tablespoons water
Optional Additions
• Blueberries
• Bananas
• Walnuts
For on Top
• Sugar Free Syrup
• Greek Yogurt
If you want to mix up your own big batch of base ingredients to keep on hand, mix the following in tupperware container, put the lid on tight and shake:
- 2 3/4 cup whole oats – ground up in blender
- 4 scoops (120g) protein powder of choice
- 2 teaspoons baking powder
- 4 teaspoon cinnamon
